酒釀芝麻湯圓 Sesame Filled Glutinous Rice Balls in Rice Wine Soup

材料 Ingredients
芝麻湯圓 Sesame filled glutinous rice ball 5 個 ea
雞蛋 Egg 1 個 ea
酒釀 Fermented sweeten rice3 大匙 Tbs
白糖 Granulated sugar 1 小匙 tsp
桂花醬(可免)Osmanthus sauce (optional)1 小匙 tsp

做法
1.2/3 鍋的水燒滾。將芝麻湯圓放進水裡用中火煮到湯圓浮在水上3分鐘。剛煮時要攪動一下以免湯圓黏鍋底。
2.雞蛋打散。
3.舀出湯圓放進碗裡。將鍋裡的水倒到剩下2杯。
4.加入酒釀,糖和桂花醬煮2分鐘。煮時略為攪動。
5.讓湯大滾。快速攪動湯讓其成旋渦狀後倒入蛋汁﹐馬上熄火。再將蛋湯倒入裝湯圓的碗裡即可。



Procedure
1.Boil a 2/3-full pot of water. Place the sesame filled rice balls into the water and cook over medium heat until they are floating for 3 minutes. Gently stir the rice balls in the beginning to prevent them from sticking to the bottom of the pot.
2.Beat the egg.
3.Transfer the cooked rice balls to a bowl. Discard the water but leave 2 cups in the pot.
4.Add the fermented sweeten rice, sugar and Osmanthus sauce and continue to cook for 2 minutes, stir occasionally.
5.Bring the soup to a boil. Quickly stir the soup to form a whirl. Add the beaten eggs and turn off the heat. Pour the soup over the rice balls and serve.
